Sauteed Spinach and Arugula with Goat Cheese

Sauteed Spinach and Arugula with Goat Cheese

Ingredients (*use organic)

Several handfuls of Arugula and Spinach
2T of Olive Oil
2 Scallions (diced)
1T Lemon Juice
Goat Cheese (crumbled)
Pinch of Sea Salt
Pinch of Cracked Pepper

In a pan add your oil and turn to medium heat. Add arugula, spinach and scallions. Cook until the greens are wilted. Add the lemon juice, sea salt and pepper. Crumble the goat cheese on top and serve immediately.
